Happy New Year everyone! It’s New Year’s Day, so let’s get on with our New Years resolutions! This morning I’m enjoying this Mango Mint Smoothie with Chia Seeds…Yum Yum Yum!

This Mango Mint Smoothie with Chia Seeds

I still can’t believe another year has gone by. I’m sitting here sipping on this smoothie and reflecting everything that has happened in this last year. It truly was an amazing year and I’m very thankful for that.

Now I sit back and think hmmm, I wonder what this next year will bring?

I don’t usually make New Years resolutions. My thought is that every day should be a resolution to do something better than the day before. With that being said, today I am going to get back on track with eating healthy.

I have fallen off the ‘health wagon’ a bit over the last 2 months with all of the holidays. I went to put on my comfy loose pants and they were too tight, ugh! You see over Christmas we drove back to Minnesota to visit our friends and family, which was so much fun. We had so many get togethers which of course all involved food and wine. And you just can’t say no when all of this delicious food is presented to you… well at least I can’t!

So now I’m feeling the bulge, time to get back on my smoothie kick!

Mango

I love to put Chia Seed Gel in my smoothies to give it that extra boost. Making Chia Seed Gel is super easy, in fact I have a ‘how to’ on how to make this here: How To Make Chia Seed Gel

I like to make a batch of Chia Seed Gel and store it in a mason jar in the fridge. That way when I’m ready to make a smoothie in the morning I can just scoop some into my blender to mix in.

Chia Seeds have so many benefits. They are rich in fiber, Omega 3s, protein, and vitamins. It’s truly a super food!

You can use just the Chia Seeds instead of making the Chia Seed Gel, however for me personally I find that it’s easier to digest when it’s in a gel form.

This Mango Mint Smoothie with Chia Seeds

Here’s what I love about this smoothie:

  • It tastes like an amazing Mango tropical drink (think of sitting on the beach with one of these)
  • It has a great minty taste that is so refreshing
  • It’s Dairy Free, I used Coconut Milk instead which gives it a more tropical flavor too
  • Adding Chia Seeds makes it an super healthy smoothie
  • It’s super easy to make, breakfast is ready in 5 minutes

Ingredients
  

  • 1 cup Unsweetened Coconut Milk
  • 2 Bananas peeled
  • 1 Mango peeled and cored
  • 10-20 fresh Mint leaves depending on how minty you like it
  • 2 Tbs Chia Seed Gel

Instructions
 

  • Add all ingredients to a blender and blend well, about 30 seconds.
  • Enjoy!
