These Grilled Lemon Salmon Skewers can be prepped and grilled in about 20 minutes! They are so tender and flaky inside with a bit of charred crispiness on the outside.
I don’t know about you, but I’m going to be doing a lot of grilling this weekend.
One of my favorite things to grill is Salmon. Normally I cook it in one piece with the skin on, but today I decided to try something different.
I removed the skin and cubed them up to put on skewers along with some lemon slices!
Now it’s definitely important to look for Salmon that is on the thicker side. The thicker the better so it will hold together when cubed up.
As for the lemons, make sure you slice them nice and thin. It will make it easier to bend them a little to put them between the Salmon, like shown in the pictures.
Here are the deets of what you need to make this:
- 2 lbs Salmon cut into 1 inch pieces
- 2 Lemons sliced thin
- 1 Lemon sliced in half
- Sea Salt
- Pepper
- EVOO
Now fire up the grill! That saying never gets old to me. 🙂
Heat your grill to medium heat or around 350 degrees Fahrenheit.
Skewer the Lemon Slices in between the Salmon pieces. Brush with EVOO and lightly sprinkle with Sea Salt and Pepper.
Place the 2 Lemon halves on the grill, cut side down.
Grill the Salmon turning occasionally until fish is opaque throughout, about 10 minutes or until internal temp is 145 degrees. Remove Skewers and Lemon halves from grill.
When the Lemon halves are cooled to the touch squeeze the juice over the Salmon and proceed to chow down on all this deliciousness!
