Grilled Veggie Skewers

These Grilled Veggie Skewers are the perfect side dish for your next bbq! They cook in about 10 minutes and are so flavorful and healthy!

Who else is ready for grilling season?! I love grilling and try to do it at least once a week here if not more. The food that is grilled just tastes so much better. I mean who doesn’t love a good char on their grilled food!

I love doing skewers on the grill. Usually I use some sort of meat or seafood to go in between the veggies, but today I decided just to do all veggies.

What Vegetables are Best to Grill on a Skewer?

The beauty of this recipe is that you can mix and match the veggies to whatever your favorites are! However it does help to use ones that will cook in about the same amount of time, so that some don’t get more overdone than others.

Grilled Vegetable Skewer Ingredients

  • 8 oz Whole Mushrooms
  • 1 Red Pepper cut into 1/2 inch chunks
  • 1 Green Zucchini sliced into thick half moons
  • 1 Yellow Zucchini sliced into thick half moons
  • 1 Red Onion cut into 1/2 inch chunks
  • Olive Oil
  • Sea Salt
  • Pepper

How to Prepare Vegetable Skewers for Grilling

First choose what type of skewer to use. I like to use metal skewers, because then I can use them over and over again. But you could also use Bamboo skewers as well. If you use Bamboo skewers, make sure you soak them in water for at least 30 minutes before grilling so they don’t burn on the grill.

Next, prep the vegetables. Try and cut the vegetables around the same size so that they cook evenly. Be careful not to cut them too thin, or they could fall off the skewers.

Place the veggies close together on the skewer. As they cook they will shrink a bit, so don’t be afraid to pack them tight together.

How to Grill Veggie Skewers

  1. Preheat grill between 400-450 degrees Fahrenheit.
  2. Skewer the veggies onto skewers.
  3. Brush all sides with Olive Oil.
  4. Season with Salt and Pepper.
  5. Place skewers on the grill and cook 5-8 minutes each side or until desired doneness.

      Instructions
       

      • Preheat grill between 400-450 degrees Fahrenheit
      • Skewer the veggies onto stainless steel skewers (see notes if using bamboo ones)
      • Brush all sides with Olive Oil
      • Season with Salt and Pepper
      • Place skewers on the grill and cook 5-8 minutes each side or until desired doneness
      • Enjoy!

      If you are using bamboo skewers, soak for at least 30 minutes first.
