Who else is ready for grilling season?! I love grilling and try to do it at least once a week here if not more. The food that is grilled just tastes so much better. I mean who doesn’t love a good char on their grilled food!

I love doing skewers on the grill. Usually I use some sort of meat or seafood to go in between the veggies, but today I decided just to do all veggies.

The beauty of this recipe is that you can mix and match the veggies to whatever your favs are! However it does help to use ones that will cook in about the same amount of time, so that some don’t get overdone than others.

For these I used:

  • 8 oz Whole Mushrooms
  • 1 Red Pepper cut into 1/2 inch chunks
  • 1 Green Zucchini sliced into thick half moons
  • 1 Yellow Zucchini sliced into thick half moons
  • 1 Red Onion cut into 1/2 inch chunks

Then I brushed them with Olive Oil and sprinkled with Sea Salt and Pepper before throwing them on the grill.

I like to have my grill preheated between 400 – 450 degrees Fahrenheit. That way they cook fast and you get a nice char.

For the veggies I used it only took about 5-8 minutes on each side until they were done.

I also want to note that I normally use stainless steel skewers, but if you don’t have any you can use bamboo skewers. Just make sure to soak them in water for at least 30 minutes before using them.

What to Serve with Grilled Veggie Skewers

  • Air Fryer Keto Crab Cakes
  • New York Strip Steak with Blue Cheese Butter
  • Black and Blue Burgers
  • Grilled Ribeye Steak
