For those of you that follow me on Instagram and watch my stories, you know I love to grill. I especially love grilling steak!

We have steak night a few times a month at home. Mainly because it’s more cost effective than going out to eat and I also feel like the steak I make tastes so much better. 

There’s nothing worse than going to a steak joint, paying way too much and then having it not taste the way you want it. I can’t even tell you how many times that has happened to me and it’s so disappointing.

I’m very picky when it comes to picking out my steak at the grocery store. I prefer grass fed beef because it’s better for you and it tastes so incredible!

To me it’s worth spending a little more for better quality beef. 

I usually wait to see what’s on sale and this week it was grass fed New York Strip!

I like to get the steaks that are anywhere from 1 inch to 1 1/2 inch thick. Note cook time will depend on the thickness of your steaks.

I highly recommend getting a meat thermometer for grilling. This will take the guess work out and you will never have to worry about having it under or over done.

You can check out my notes in the recipe card for different temps, depending on how you like your steak. Personally I prefer mine done medium rare like shown in the pictures.

Now can we just talk about this Blue Cheese Butter for a minute?! It’s a total game changer! You want to make this in advance so it’s ready to go when you start grilling.

O-M-Geee… this totally elevated the flavor of these steaks! I will definitely be making this again for steak night! Now get out there and start grilling my friends!

New York Strip Steaks with Blue Cheese Butter

Get ready to fire up the grill! These New York Strip Steaks with Blue Cheese Butter are so tender, juicy and flavorful it will leave you wanting more!

Ingredients

Scale
  • 2 New York Strip Steaks about 1 inch thick
  • 2 Tbs Butter at room temperature
  • 2 Tbs Blue Cheese crumbles
  • Sea Salt and Pepper

Instructions

  1. Mix together Butter and Blue Cheese in a small bowl then refrigerate
  2. Place Steaks on a plate or platter and sprinkle generously with Sea Salt and Pepper on both sides
  3. Keep the Steaks at room temperature for 30 minutes before grilling
  4. Pre heat grill to med/high heat, around 400 degrees
  5. Place Steaks on the grill and cook 4-5 minutes each side or the internal temp reaches desired doneness (see notes below)
  6. Place on a clean platter, spoon Blue Cheese Butter over Steaks, and let rest for 5 minutes
  7. Enjoy!

Notes

Use a meat thermometer to determine if you’ve cooked steaks the way you like them.

  • 120 – 130 degrees F = Rare
  • 130 – 140 degrees F = Medium Rare
  • 140 – 150 degrees F = Medium
  • 160 – 170 degrees F = Well Done
