This Baked Brie with Garlic and Thyme is like an instant fondue, perfect for dipping into with a crusty baguette! This can be ready in about 25 minutes and is always a crowd favorite!
This is one of my favorite go-to appetizers. It’s easy to throw together at the last minute and is super flavorful! My favorite thing to dip into this is a crusty baguette, but you could use veggies, crackers or anything else you desire!
What is Brie Cheese?
Brie is an off-white, soft-ripened cheese usually made from cow’s milk. It’s named after Brie, the French region from where it originated.
Camembert vs. Brie
Brie is often confused with Camembert Cheese. They both come from the northern region of France and look quite similar. You most certainly could either one for this recipe, but note that Camembert is more rustic and has more of an earthy flavor and texture.
Baked Brie Ingredients
- 1 8oz Wheel of Brie Cheese
- 1 Tbs EVOO
- 3 Cloves Minced Garlic
- 2 tsp Fresh Thyme chopped
- Pinch of Sea Salt
- Dash of Black Pepper
Should you Remove the Rind from Brie?
Brie rind is totally edible, in fact I think it helps add to the flavor. The rind helps keep the wheel of cheese together.
For this recipe you’ll see that I scored the top of the rind before baking it (watch step by step video for more on this). This makes it easier to dip into after it’s baked.
How to Make Baked Brie
- Start by preheating the oven to 350 F. Score the Brie in a criss-cross pattern across the top. Place Brie in an oven safe dish.
- In a small bowl whisk together EVOO, Garlic and Thyme. Spoon mixture over the top of Brie. Sprinkle with Sea Salt and Pepper.
- Bake 20 minutes or until cheese is nice and bubbly.
What to Serve with Baked Brie
Baked Brie is served best right out of the oven when it’s warm. Serve with veggies, fruit, chips, crostini or anything else you desire!

How to Store and Reheat Leftovers
This also reheats well in case you have leftovers. I made this for just me and my boyfriend for a date night in, we couldn’t finish it all so we saved it for the next day.
Just place it in an airtight container in the fridge for up to 1-2 days. Place it in an oven safe dish and cook at 350F until it’s nice and gooey again.

Notes
It’s best to leave the rind on the brie as this will help hold it together. The rind is edible and gives it even more flavor.
