This Instant Pot Shrimp Boil is super easy to make and cooks in a fraction of the time that a regular Shrimp Boil would take! If you love seafood and your Instant Pot, this is definitely a must try recipe!
One of my first recipes to go viral was a Shrimp Boil in Foil. I was into my second year of blogging when creating food videos started becoming popular.
I created a video for it, which now I cringe at watching because I didn’t really know much about shooting videos. I didn’t have very good lighting, didn’t know what angles to place the camera etc. But hey we all have to start somewhere right?! Maybe someday I will create a new video for it. 🙂
Anyhoo, since I now have an Instant Pot (affiliate) I decided to try this recipe using that instead! Well with a few tweaks of course since you have to add liquid to the IP. The result… WOWZA! Seriously everything cooked perfectly!
I’m a huge fan of my Instant Pot, I have not had a bad meal yet! Everything cooks evenly and stays moist.
There’s a few key notes to making this…
- Use very small potatoes. I used very tiny baby red potatoes as you can see in the photos. If you can’t find them, then chop your potatoes into bite size pieces.
And
- Use frozen jumbo shrimp. If you are using fresh shrimp, then see notes below the recipe card.
Here’s what you need to make this:
- 1 Red Onion chopped
- 5 Cloves Garlic quartered or halved depending on size
- 1 1/2 lbs Baby Red Potatoes
- 1 lb Andouille Sausage chopped into 1 inch pieces
- 3 Ears of Corn cut into thirds
- 1 lb Frozen Jumbo Shrimp
- 1 Tbs Old Bay Seasoning
- 2 Lemons cut into wedges and divided
- 3 cups Vegetable Broth
- Chives for garnish
- 1/4 cup melted Butter
Layer everything in a 6 quart Instant Pot in this order – Onion, Garlic, Potatoes, Sausage, Corn, and Shrimp. Squeeze the wedges from one of the Lemons over the Shrimp and place the wedges in the Instant Pot.
Sprinkle Old Bay over the Shrimp. If you don’t like Old Bay, just use whatever your favorite Cajun seasoning is. Pour Vegetable Broth over everything.
Place lid on Instant Pot, set the valve to sealing position, and set pressure cook on high for 5 minutes. (If using fresh Shrimp see notes in recipe card). Note it will take around 20 minutes for it to come to pressure.
When timer goes off release the steam valve. Once all the steam is released and the pin is dropped open lid. Remove everything with a slotted spoon and place on a platter.
Squeeze remaining Lemon wedges over everything. Drizzle the melted Butter over everything and add more Old Bay Seasoning if you want more spice.
Garnish with Chives and proceed to chow down on all this deliciousness!

Notes
If you are using fresh Shrimp then do not put it in right away. Cook everything else as instructed first. Add to the Instant Pot, seal and cook on high pressure for 1 more minute. Release the steam valve and wait for pin to drop before opening lid.
