This easy Greek Sheet Pan Salmon Dinner comes together in about 20 minutes, making it perfect for those busy weeknights! The Salmon comes out perfectly flaky and the combination of flavors is like a taste explosion in your mouth!
I don’t know about you, but I just love sheet pan dinners. It’s just so easy to throw everything on one pan and cook it.
I’ve been on a bit of a Greek food kick lately which is how I came up with this creation today.
Alright, let’s get into this recipe!
Here’s what you need to make this Greek Sheet Pan Salmon Dinner:
- 2 4oz Salmon Fillets
- 1 cup Cherry or Grape Tomatoes
- 1/2 cup Pitted Kalamata Olives
- 1/2 Red Onion chopped
- 1 Lemon sliced
- 3 oz Feta Cheese
- 3 Tbs EVOO
- 1 Tbs Dried Oregano
- 1/4 tsp Sea Salt
- 1/4 tsp Black Pepper
Preheat oven to 400F. Place Salmon, Tomatoes, Olives, Onion, Lemon slices and Feta on sheet pan.
Drizzle EVOO over everything. Sprinkle with Oregano, Salt and Pepper. Bake 15-20 minutes or until Salmon is cooked through.
This is great served with rice or a salad.
