Low Carb Cauliflower Garlic ‘Breadsticks’

Good old cauliflower saves the day again from my cheesy breadstick craving! These Low Carb Cauliflower Garlic ‘Breadsticks’ seriously taste just like the real thing! Can I be totally honest here and tell you that I ate this whole pan by myself…in one sitting…uhhhh…yeppers! 😛 And it was worth every single cheesy bite.

But guess what didn’t happen…I didn’t feel totally sick and bloated after eating this. If these would have been real breadsticks, ummm yeah, I would not be feeling so well.

If you’re new to the blog, I went Gluten free almost 2 years ago now, wow has it been that long?! I don’t have an allergy to it, but I do have a sensitivity to Gluten. Every time I would eat something with Gluten in it, I would feel like I had a big balloon in my stomach from being so bloated. So I decided to cut Gluten out of my diet. It was hard at first, yes. I used to be a HUGE bread lover, and I can tell you right now I don’t miss bread one single bit.

I’ve learned how to make things taste like bread, such as these Cauliflower Breadsticks, or my Margherita Pizza with Cauliflower Crust (which btw is my new favorite pizza)!

Even if you don’t have a Gluten allergy or intolerance, give these a try! Because guess what…they are also Low in Carbs!!! Can I get a ‘Woohoo’! 🙂

Place chopped cauliflower in a Food Processor, pulse for around 30 seconds until cauliflower looks like snow.

Then place the cauliflower in a microwave safe bowl and heat for 2-3 minutes covered. Let it cool before the next step.
Wrap up the cauliflower in a cheese cloth and squeeze as much water out as you can, then add cauliflower to a medium size bowl.
Add 1/4 cup mozzarella cheese, parmesan cheese, oregano, basil, garlic salt, black pepper, salt, red pepper flakes. Stir together. Add egg and stir until blended together.

Making Cauliflower Garlic 'Breadsticks'

Form cauliflower ‘dough’ into a ball with your hands and place on parchment paper over a baking sheet.
Spread the dough out to the edges of the pan.
Bake at 450 degrees for 10-15 minutes until crust is golden brown.
Top with Mozzarella cheese and bake 5-7 minutes until cheese is bubbly.

  • 1 head of cauliflower
  • 1/4 cup of mozzarella cheese for breadstick ‘dough’
  • 1/2 cup of mozzarella cheese for topping
  • 1/4 cup of parmesan cheese
  • 1/4 tsp sea salt
  • 1/2 tsp back pepper
  • 1/4 tsp red pepper flakes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp garlic salt
  • 1 whole egg
  • 1 cheese cloth

Instructions

  1. Pre-heat oven to 450 degrees.
