This Spicy Sausage and White Bean Soup with Spinach is super easy to make, hearty, and so flavorful! Just add everything to a Slow Cooker and dinner will be waiting for you when you come home at night!
I love making hearty comforting soups in the winter. I mean, who doesn’t want to wrap their hands around a warm bowl of soup and savor it all in?
The creation of this Spicy Sausage and White Bean Soup with Spinach came about during one of my fridge clean out days. I had some celery, carrots, and spinach that were on the verge of going in the trash, so I thought HEY why not make soup!
I also had a couple of lonely cans of cannellini beans that were very close the the expiration date, and I certainly do not like to let stuff go to waste!
Now if you are not a fan of spicy sausage like the andouille sausage in this recipe, you can certainly sub it out for your favorite sausage.
Here’s what you need to make this:
- 6 cups Chicken Broth
- 12oz Andouille Sausages sliced thin
- 2 15oz cans of Cannellini Beans
- 3 Celery stalks chopped
- 3 Carrots chopped
- 1 large Sweet Onion chopped
- 3 cloves Garlic finely chopped
- 1 Tbs dried Parsley
- 1 tsp dried Oregano
- 3 tsp Sea Salt
- 3 tsp Black Pepper
- 5 oz fresh Spinach
Then just add all ingredients except the Spinach into the Slow Cooker. Cover and cook on low for 6 hours. Add in Spinach, cover and cook additional 30 minutes.
Taste and add more salt or pepper to your liking. Serve with your favorite rustic bread and get ready for pure comfort food!
