This Chickpea Salad Sandwich is loaded with flavor! It’s also full of protein and makes for a healthy nutritious lunch.
I’ve been trying to figure out new ways to use up the case of Chickpeas I have in my cupboard. Yes you read that right… a CASE!
A few months ago when everyone was stocking up on pantry items it created a food shortage, at least for where I live.
All I wanted was one can of Chickpeas. So on my grocery shopping trip I was a little in shock when I saw the shelf where the chickpeas and beans normally live were completely empty. Ugh.
So I hopped on good ol’ Amazon to order some. The only kicker was that I had to order a case of them. Yep, so that’s my interesting story for the day. 😛
Alright, now let’s get into the making of this Chickpea Salad Sandwich!
Rinse and drain the Chickpeas and add them to a shallow dish. I used a pie dish.
Now mash up those Chickpeas! I used a potato masher which I thought worked well. You can mash them to your desired consistency. I personally like to leave some of them whole for more texture.
Add in some Red Onion, Dijon Mustard, Mayo, Tarragon, Sea Salt, and Pepper. This is basically the same mix that I use to make egg salad sandwiches with as well.
I have made this several times now (because I have a case to use up LOL). I’ve had this on bread obviously, but I also found it super yummy in lettuce wraps as well.
Heck, you could even do a tortilla wrap with it if you wanted. Do it up your way!
It’s also great for meal prepping if you want to make a big batch for lunches for the week.

Ingredients
- 1 15oz can Chickpeas drained and rinsed
- 1/4 cup finely chopped Red Onion
- 1 Tbs Dijon Mustard
- 1/4 cup Mayo
- 1 Tbs dried Tarragon Leaves
- Sea Salt and Pepper to taste
Instructions
- Add Chickpeas to a shallow dish and mash with a potato masher
- Mash to your desired texture, I like to leave a few whole
- Add Onion, Mustard, Mayo, Tarragon, Salt, and Pepper
- Mix well, taste and add more Salt or Pepper to your liking
- Makes 3-4 sandwiches depending on the size of your bread
- Enjoy!
