This Creamy Chicken Sausage and Spinach Pasta can be ready in less than 20 minutes! The sauce really makes this dish, it’s so luscious, creamy and dreamy! You may even want to drink this right out of the pan (although I don’t recommend that lol).
There’s nothing better than a good creamy pasta dish on a cozy Fall night. To me it’s just pure comfort food.
Serve it up with a fresh baguette, my Kale Caesar Salad, or even some yummy Roasted Asparagus.
What Kind of Pasta Should I use?
For this recipe I used a gluten free Penne Pasta. But you could use any type of short pasta like Rigatoni, Ziti or Farfalle.
Recipe Ingredients:
- 12 oz Penne Pasta (I used DeLallo gluten free brand)
- 1 Tbs Sea Salt for the Pasta water
- 2 Tbs EVOO
- 12 oz Hot Italian Chicken Sausage
- 1 Sweet Onion Diced
- 4 Cloves Minced Garlic
- 1/4 cup White Cooking Wine
- 1 cup Chicken Broth
- 1/4 cup Heavy Whipping Cream
- 5 oz Baby Spinach
- 1/4 cup Parsley Chopped
- 1 1/2 cups Shredded Parmesan
- Sea Salt and Pepper to taste
- Reserve 1 cup Pasta water after cooking the Pasta
How Do You Make Chicken and Sausage Pasta?
Start by bringing a large pot of water to a boil, then add 1 Tbs Sea Salt and the Penne. Cook as directed on package or until al dente.
Reserve 1 cup of Pasta water and set aside after Pasta is cooked. This will help make the creamy sauce.
Add EVOO to a large skillet and heat over med/high heat. When the oil starts to shimmer, add Onion and Sausage.
Cook 5-8 minutes or Sausage is cooked through and no longer pink. Then add the Garlic and sauté 1 minute.
Next add in the White Wine and let reduce down a bit, about 1-2 minutes. Stir in Chicken Broth, Heavy Cream, then turn the heat down and let it simmer 1-2 minutes.
Now add in Spinach, Parsley, Parmesan, Penne, Sea Salt and Pepper. Add in your desired amount of reserved pasta water (depending on how creamy you want it).
Cook 1-2 minutes then serve immediately and enjoy!
Can I Reheat Chicken Sausage and Pasta?
Absolutely! You can microwave it of course, but for best results I like to throw it back into a skillet with some melted Butter, and a splash of Heavy Cream so it gets nice and creamy again.

Notes
I used fresh raw chicken sausage. You can use precooked chicken sausage, just cut the cooking time down to 1-2 minutes.
