For those of you that follow me on Instagram and watch my stories, you know I love to grill. I especially love grilling steak!
We have steak night a few times a month at home. Mainly because it’s more cost effective than going out to eat and I also feel like the steak I make tastes so much better than the ones I get at a restaurant.
There’s nothing worse than going to a steak joint, paying way too much and then having it not taste the way you want it. I can’t even tell you how many times that has happened to me and it’s so disappointing.
What is New York Strip Steak?
New York Strip Steak is a cut of beef from the short loin of a cow. Delmonico’s, a New York City restaurant founded in 1827 started offering this as their signature dish, calling it the Delmonico steak.
Since that restaurant was located in New York City, this steak is often referred to as a New York Strip Steak.
Ingredients
- New York Strip Steak – I highly recommend getting grass-fed, the flavor is just so much better! To me it’s worth spending a little bit more for better quality beef. I like to get the steaks that are anywhere from 1 inch to 1 1/2 inch thick. Note cook time will depend on the thickness of your steaks, see recipe card.
- Butter – Again I prefer using grass-fed butter, because it’s so much more flavorful.
- Blue Cheese Crumbles – To mix with the butter.
- Sea Salt and Pepper – To season the steak with.
How to Make Blue Cheese Butter for Steak
Mix together the Butter and Blue Cheese in a small bowl and refrigerate for at least an hour before you cook your steak.
How to Grill New York Strip Steak
- Place Steaks on a plate or platter and sprinkle generously with Sea Salt and Pepper on both sides.
- Keep the Steaks at room temperature for 30 minutes before grilling. This will allow them to cook more evenly and make them more tender.
- Pre heat grill to med/high heat, around 400 degrees.
- Place Steaks on the grill and cook 4-5 minutes each side or the internal temp reaches desired doneness (see notes in recipe card for steak temps.)
- Pull them off the grill and place on a clean platter, spoon Blue Cheese Butter over Steaks, and let rest for 5 minutes. It’s important to let meat rest, this will bring out the juices, make it more tender and it will be more savory.
Strip Steak Temperature
I highly recommend getting a meat thermometer for grilling. This will take the guess work out and you will never have to worry about having it under or over done. Personally I prefer mine done medium rare like shown in the pictures.
- 120 – 130 degrees F = Rare
- 130 – 140 degrees F = Medium Rare
- 140 – 150 degrees F = Medium
- 160 – 170 degrees F = Well Done
Keep in mind that the Steak needs to rest for 5 minutes, so it’s best to pull it off the grill a few degrees before you reach your desired temperature.
It’s always better to under cook a steak, because you can throw it back on the grill for a few minutes if you want it more done. If you overcook it, well there’s no fixing that.

Ingredients
- 2 New York Strip Steaks about 1 inch thick

- 2 Tbs Blue Cheese crumbles

Notes
Use a meat thermometer to determine if you’ve cooked steaks the way you like them.
