This Garlic Lemon Salmon with Brussels Sprouts is such an easy dinner. It only requires 5 ingredients and everything bakes on one sheet pan making cleanup a breeze!
Salmon is one of my favorite go-to dinners because of how versatile it is. You can pair it with so many different veggies and season it to your liking.
One of my favorite ways to jazz it up is by adding lots of Garlic and Lemon like I did with this recipe.
Here’s what you need to make this Garlic Lemon Salmon with Brussels Sprouts:
- 1 lb Salmon fillet
- 1 lb Brussels Sprouts stems remove and cut in half or quartered depending on how big they are
- 6 Garlic cloves minced
- 4 Tbs EVOO divided
- 2 Lemons sliced
Now this if for 2 servings, so adjust according to how many people you are feeding.
Preheat oven to 400 degrees Fahrenheit. Place Brussels in a large bowl. In a small bowl mix together half of the Garlic and 2 Tbs EVOO.
Pour over the Brussels and toss to coat them well. Place Brussels on a sheet pan in a single layer and bake 15 minutes.
Next place Salmon fillets on sheet pan. Mix together the rest of the Garlic and 2 Tbs EVOO and pour over each Salmon fillet.
Place Lemon slices over Salmon and Brussels. Bake 15-20 minutes or until Salmon is cooked through. That’s all there is to it to this easy delicious meal!
