This Lemon Thyme Salmon with Zucchini can be ready in about 20 minutes and all on one sheet pan! The Salmon comes out perfectly flaky and the Zucchini is the perfect pairing for this!
I so love easy dinners like this. When you can come home after a crazy, busy day and have a super yummy dinner ready in no time.
Sheet pan dinners are always my go-to on nights like this. It just requires so little effort, but yet looks and tastes like you spent a lot of time in the kitchen.
I make Salmon at least once a week in our house. I just love it because it’s so versatile and you can mix it up with your own favorite seasonings etc. (Make sure to scroll down for more delicious Salmon recipes!)
Here’s what you need to make this Lemon Thyme Salmon with Zucchini:
- 2 4oz Salmon fillets
- 2 Zucchinis chopped into bite size pieces
- 1 Lemon sliced
- 2-3 Tbs EVOO
- 2-3 tsp dried Thyme
- Sea Salt and Pepper to taste
Now I know some people don’t like it when I say season with Salt and Pepper to taste. But everyone’s taste is different, so I would suggest to start with just a little bit and you can always add more after it’s cooked if you like.
Preheat your oven to 400 degrees Fahrenheit. Place Salmon and Zucchini on sheet pan and spread everything in a single layer.
Drizzle EVOO over everything, then place Lemon slices over Salmon and Zucchini. Sprinkle with Thyme, Sea Salt and Pepper.
Bake 15-20 minutes until Salmon is cooked through. You’ll know it’s done when the Salmon is nice and flaky.
