Ok you guys, this Roasted Garlic Cauliflower recipe is so addicting! I seriously can’t stop eating this! But that’s ok, because it has almost zero calories and hardly any carbs…woohoo! That means I can eat the whole pan!
Cauliflower is probably one of my favorite vegetables.
It’s one of the most versatile vegetables. You can eat it raw and dip it in some Spicy Hummus, or use it to replace certain types of foods. For instance, I like to use it to make a gluten free, low carb Cauliflower Pizza Crust. Or even use it to make Cauliflower Rice.
Or you can just roast the Cauliflower like I did today.
It always amazes me how roasted vegetables have such a rich unique flavor. I try to roast veggies whenever I can for an easy side dish.

- Cauliflower
- Garlic
- Extra Virgin Olive Oil
- Sea Salt
- Pepper
That’s it, so simple!
How to Roast Cauliflower
- Preheat oven to 425 degrees Fahrenheit.
- Wash Cauliflower and remove stems.
- Chop Cauliflower into bite size pieces.
- Add it to a large bowl along with the Garlic, Salt and Pepper.
- Drizzle Olive oil over Cauliflower and mix with a spoon so it’s all covered.
- Place Cauliflower onto baking sheet.
- Bake 15 minutes, flip and bake 10-15 minutes more until Cauliflower is cooked through.
Can you make this ahead of time?
It’s best served right away so it doesn’t get too soft.
How long to Roast Cauliflower?
For perfectly crispy Roasted Cauliflower, bake at 425F for 25-30 minutes.
Why does my Roasted Cauliflower get mushy?
Once it’s roasted, it should be nice and firm, slightly tender but not too soft. You may have added too much oil or cooked it too long.
Why is my Roasted Cauliflower tough?
It’s undercooked. Perhaps the florets are too large, just cook it a bit longer.
Can you roast frozen Cauliflower?
Yes, but I recommend using fresh if you can. Do not thaw it first. Cook it the same way but add 10-15 minutes of cook time.
How to store it
This can be stored in an airtight container in the refrigerator for 3-4 days. You can reheat it in a skillet or in the oven at 350F until it’s warm. You can microwave this, but I don’t recommend it because it tends to get mushy.
