We are gearing up to host our first New Year’s Eve party in our new house and I am super stoked!
I’ve been testing out new appetizers to make for it and these Buffalo Chicken Nachos are definitely going to be on the menu!
This is probably one of the easiest appetizers I’ve ever made and since everything bakes on a sheet pan, all you need to do is bring the pan to the table and let everybody dig in!
Plates are optional! 🙂
I used a Rotisserie Chicken and shredded all of the meat off the bone. Then mixed it with some Frank’s RedHot Sauce and Ranch Dressing. (You can use whatever your favorite buffalo or hot sauce is too, depending on how hot you want this).
Placed the Corn Chips on a sheet pan. Topped with the Chicken and Sharp Cheddar Cheese, then baked it until the Cheese was all nice and melty.
Topped with some Blue Cheese crumbles and Jalapeño slices… Ohhh yeah! These were gone in line 10 seconds!
I don’t know about you, but I cannot wait to eat these again on New Year’s Eve! Cheers my friends and have a safe and happy holiday!

Ingredients
- 1 Rotisserie Chicken
- 1/4 cup Frank’s RedHot Sauce
- 2 Tbs Ranch dressing
- 2 cups shredded Sharp Cheddar Cheese
- 3 Tbs Blue Cheese crumbles
- 6–8 Jalapeno slices
- Corn Chips
Instructions
- Preheat oven to 350 degrees
- Shred the Rotisserie Chicken and add to a medium bowl
- Add Frank’s RedHot and Ranch dressing to Chicken and mix well
- Spread out Corn Chips onto a sheet pan
- Top Chips with Chicken, and Sharp Cheddar
- Bake 10-15 minutes or until Cheese is melted
- Sprinkle Blue Cheese crumbles over Nachos
- Add Jalapeño slices
- Serve and enjoy!
